Falafel

Ingredients: 

  • 1 kilograms Chick Peas
  • 100 gram Garlic
  • 150 Onion
  • 100 gram Coriander
  • 1 chilies
  • 2 tablespoons Falafel Spice: (Cumin, Turmeric, Coriander, andCayenne)
  • 1 tablespoons baking soda
  • Salt to taste.

Soak the chick Peas in water for at least 8 hours. Grind the Chick Peas, Garlic, Onion, chili and coriander together, with a small amount of water, adding the falafel spices, baking soda, and salt. Leave set for at least one hour, then deep-fry in hot oil for about three-minutes, or until brown

Tahini Dressing for Falafel

100 gram Tahini (Sesame Seed Paste)                

Water, as much as needed to achieve a soft cream like texture. The raw tahini paste will keep on absorbing the water.

Garlic Clove, crushed

Lemon Juice, freshly squeezed          

1 cup Parsley chopped

 Salt and white pepper

Mix all ingredients. The mixture should be the consistency of a creamy salad dressing.  Add more water, if necessary. Use as a sauce for a falafel sandwich.

    Yield: 12 servings, 3/4 cup
